Blue Cheese Steak Pasta

This is one of those plates that feels restaurant level but takes about fifteen minutes in real life. The mild, creamy 1912 Stilton melts into the sauce and gives it a deep savoury flavour without being overpowering, and the quick seared steak makes it feel properly indulgent. A perfect weeknight treat that still fits the everyday cooking vibe.

Notes

Rest the steak for a minute before adding back in so the juices stay in the meat. | Add pasta water slowly. It makes the sauce silky without thickening too fast. | If you want extra flavour, deglaze the pan with a splash of white wine before adding the cheese. | Reheat gently with a splash of water or cream. Or slice the cold leftovers and use as a warm pasta salad with rocket and walnuts.

Amazing! Not being a fan of red meat, I used quorn peppered ‘steak’ and added green beans with a sprinkling of chopped walnuts. Going to try it with mushrooms next time 🙂

Lovely, added the amount it said but I’d like it a bit more cheesy so will be going heavy on the cheese next time

Definitely, more cheese power to you! Maybe try also adding some extra at the end for that melty goodness.

Made this for my father and me, he almost cried because of how good it was... Had moose steak instead of beef (we're from Canada). Seriously delicious!! Merci!

Had to substitute the Stilton for Gorgonzola as it’s very hard to get a proper one over here and air fried the steak. Amazing dish that went down a treat.

I was worried about using too much blue cheese and it being too strong for the kids, but they loved it. Next time I’ll definitely use more! It was lovely.

Awesome, Demi! Glad the Stilton had the kiddos munching away. Next time, more cheese for all! 🧀🍝

That 1912 is so nice. Tasty, creamy and smooth. Not overpowering in the meal at all… again the ingredients and easy to follow recipe is so bang on. You can add any meat or prawns to this meal… I loved the sirloin though. Family loved it.

Yes, Neil, that Stilton is a real star isn't it! So thrilled to hear your family loved it too. 😊
