Not a fan of gnocchi, so swapped it out with diced potatoes. Took an extra 15 mins or so at the start for the potatoes so they were not hard at the end but so worth it.

Pic taken after two thighs plated up. Always chop up and freeze fresh veg that would otherwise feed the worms. This was a freezer veg spesh 🤣

2nd time I've made this - I tend to leave the gnocchi in for 10 mins just because.... I just use the veg I've got to hand. Today it was red pepper, carrot and homegrown courgette and onion. Oh and I pimped it with chicken breast instead of thighs.

A slightly smaller baking tray, ended up putting it in for abit longer at the end. BUTTTT, it was absolutely banging, so much flavour in this! Will become a regular for my house.

This is a terribly written recipe 😭 no detail, the chicken and gnocchi have both come out undercooked. Not nearly enough detail if you aren’t a strong cook
