Turn cooking mode on

Step 1

Heat the oven to 200 degrees, then add the chicken, chorizo, onion, pepper, mushrooms, broccoli, gnocchi and beans straight into a large roasting tray. Mix the olive oil, garlic, smoked paprika, oregano, lemon zest, salt and pepper in a small bowl and drizzle it over the tray, then toss everything well.

Notes

Adding all the ingredients at once keeps this truly one tray and the chorizo oil carries the flavour through the whole dish. | If you want softer broccoli, cut the florets smaller. If you want it firmer, keep them larger. | Any packet grains work and make the meal more filling. Mediterranean grains, wild rice blends or even pure basmati all absorb the tray juices well. | Add a spoon of tomato paste at the start if you want a deeper, richer base. | Crispy chilli oil is the perfect finish because it adds crunch, heat and richness without extra effort. | Store in the fridge for up to two days. Reheat in a pan with a splash of water to loosen the grains. Leftovers make a great warm lunch bowl with extra yogurt, parsley and a little more crispy chilli oil.

Another amazing dish! So easy and loaded with everything good. Being from Southern California you through me a bit on the chorizo. I only knew of Mexican chorizo. Had to look this up and learned Spanish chorizo is a very different thing. Thanks for the recipe!

Great easy and tasty dinner for midweek. I had chickpeas in the cupboard so used those and didn't bother with the grains as there was plenty in the tray. Kids ate it all which is a great sign.

Forgot to make a picture, but this was a really nice dish, that didn’t take a lot of effort. I was pleasantly surprised of the combination of the feta, crème fraiche and crispy chili oil. I will definitely use that more often!

I used up all the veg about to go bad: Brussels, green beans. I used squash and carrots also. I used couscous as my grain because I didn’t have anything else. It was delicious. I had ricotta and/or crème fraise and chili crisp and/or crunchy chili onion crisp from Trader Joe’s. It was fantastic!

I changed the breast for right , beans for chick peas and added in lentils instead of grains. ..some chicken stock and lemon juice also ...popped in a bit of rosemary and thyme. Decent

First try at this- me n the missus liked it, kids not so much. Eldest is veggie so swapped chicken & Chorizo for halloumi in hers. Will try a variation perhaps swap the gnocchi out for something else
