My husband and I had eaten ours before I remembered about photos. My son doesn’t like feta so had cheddar and the meat taken off the bone. Amazing meal quick easy I was running low on veggies but 2 manky courgettes a punnet of mushrooms and some peas surpassed themselves

Yeah, breast fillets work well! They’re leaner, start by cooking for a shorter time to avoid them drying out. If richness matters, thighs bring juiciness.

Good on you for trying something different to pasta Scott! Yeah, it's amazing how quickly the chicken stock is absorbed - if you think it's looking dry in the pan next time, add some more stock in small amounts over time and give it a good stir!!

It could be due to a number of things like the heat being too high when you left it to simmer or potentially not enough liquid. Give it another go and just really keep an eye when you get to the simmering part of the recipe and add a dash more liquid if it's starting to stick!
