Season your steak and we want to reverse sear. Ideally insert your wireless meat thermometer and get it in the oven at about 100-150 °C to cook low and slow - you want your steak around 55 °C for a nice medium rare - will vary timing on your cut of meat (you can obviously pan fry too).
