Heat a large frying pan over medium heat and add 2 tbs of olive oil. Dry the chicken skin, salt generously and then place the chicken skin-side down and cook until the skin is golden and crisp. Turn over and cook for a further few minutes, until cooked through. Remove from the pan and set aside. Reserve the oil in the pan.

Cut the sprouts and kale thinly for a lovely texture. This also works well without chicken & anchovies as a veggie alternative. Keep some of the salad undressed and dress it the next day to avoid it going soggy | Any extra croutons are great on a warm soup the next day
