Turn cooking mode on

Cook the pasta in well-salted boiling water until around 2 minutes under al dente, reserving at least 250ml pasta water. Season the steaks generously. Heat a large frying pan until very hot, add the oil and cook the steak for around 2-3 minutes per side, depending on thickness and how you like it cooked. Remove and rest.

Keep any leftover steak separately if possible. Reheat the pasta gently with a splash of water, milk or stock until silky again, then add the sliced steak right at the end just to warm through.
Leftover steak also works brilliantly cold in a sandwich or wrap with rocket, roasted peppers and a little of the leftover sauce.
