Heat oven to 220°C. Halve larger potatoes, leave small whole. Toss with oil, salt, pepper, herbs and garlic. Spread out on a tray and roast 35–40 minutes, turning once, until golden and crisp at the edges.

Sweet vs salty is the key balance here, the onions and pear stop the Roquefort overpowering everything. | Give the potatoes space on the tray or they will steam instead of crisp. | If blue cheese feels strong for the kids, mix it half-and-half with cream cheese. | Want extra depth?
