Instead of blackberries, use cranberries, raspberries, rhubarb or whatever is in season. Remove the rice pudding the heat whilst it’s still runny as it will continue to thicken as it stands | Use the compote on yogurt or on pancakes for breakfast

Yes, make ahead is fine! Just keep the pudding separate from the compote and store in the fridge, then warm gently before serving.
