Turn cooking mode on

Step 1

Get a cast iron skillet properly hot. Add the lamb chops and cook for around 3-4 minutes each side, depending on thickness, until deeply browned and 54-57°C internally for medium-rare. Render the fatty edges against the pan too. Remove and rest.

Notes

  • No minted chops? Season plain lamb with garlic, oregano, lemon zest and fresh mint.
  • Swap basmati for brown rice, bulgur wheat, couscous or cooked orzo.
  • Use cannellini beans or chickpeas instead of butter beans.
  • The easy portion rule: roughly 150g lamb + 75g cooked rice + ½ tin beans + 30g hummus + loads of veg per person. It keeps the plate substantial without the calories running away.

Leftovers: Strip any remaining lamb from the bone and refrigerate with the rice, beans and courgettes for up to 2 days. It’s particularly good turned into a lunch bowl with fresh salad, hummus and plenty of lemon.
