I can't help being THAT person, I'm an editor with 30 years of experience. In the video you add a splash of sesame oil and coriander at the end of cooking, in the recipe you add sesame seeds and spring onion don't mention coriander and sesame oil, and the second slug of sesame oil and coriander aren't on the ingredients list. I taste soap with fresh coriander so I'm going with the spring onion, but thought I should mention it!

My main question about this...is one thigh per person and one cup of rice between four enough? I'm cooking for four adults, and would usually allow at least two thighs per person....

Maybe try two thighs per person and 1.5-2 cups of rice if you want a heartier portion, if not should be fine!

The flavours were great. I did have to cook the basmati rice a lot longer than the 15 minutes from the recipe. Kept adding stock, it took about 30 minutes. Next time I will cook it first for 15 minutes in the stock, and then get on with the next steps.

That looks delicious! Sorry to hear about the rice timing, sometimes different brands can differ with the cooking time, but it sounds like you've come up with a solution for next time!

Tried this , only had basmati rice , could find a balance between getting the rice dry and stuck to the pan or too moist ...wrong rice used ? Wrong pan ? I washed it plenty of times ..any ideas
