Heat oven to 200°C. Add tomatoes, peppers, onion, and the halved garlic bulb to a tray. Toss with olive oil, tomato purée, smoked paprika, oregano, chilli flakes, salt and pepper. Roast until everything is soft and slightly charred on the edges.

I have made this for the first time today and even my 5 year old loves it! Excellent way of getting some veg into him! Do you know if it is freezable so that I could batch cook some?

Yes, you can freeze it! Just cool the soup fully first, then portion it out, wrap well, and freeze. Defrost in the fridge overnight when you need it. Keep the yogurt or cream out until reheating for best texture.
