Creamy Roasted Tomato, Red Pepper, Garlic & Orzo Soup

There’s nothing quite like a bowl of creamy roasted tomato soup on an autumn or winters day — and this version takes it up a notch with the addition of orzo! Finished with a sprinkle of fresh basil and a generous grating of Parmesan or Pecorino; served alongside a nice chunk of crusty sourdough, go get after it!

Added some crispy bacon's bits to give it a bit more pop. Might go with some small frozen veg too next time, for added texture.

I have made this for the first time today and even my 5 year old loves it! Excellent way of getting some veg into him! Do you know if it is freezable so that I could batch cook some?

Yes, you can freeze it! Just cool the soup fully first, then portion it out, wrap well, and freeze. Defrost in the fridge overnight when you need it. Keep the yogurt or cream out until reheating for best texture.

I've made this twice in one week as I delivered a batch to each family member who lapped it up and immediately demanded more! Yum! Thanks Tyler. I wont photograph a second time as I don't want to cheat the Nov challenge by claiming the same recipe twice. 😉
