Add a handful of spinach at the end for extra greens. | A few prawns mixed in with the fish pie mix make it feel more luxurious. | A squeeze of lemon or some lemon zest stirred into the sauce brightens the whole dish. | Use smoked fish if you want a deeper flavour. | Store in the fridge for up to 2 days. Reheat in the oven at 180C for 15 to 20 mins to keep the filo crisp. Great served on toast or spooned into a warm wrap the next day.

200 degree fan maybe too high. My sauce seemed to go very thin , near on existent

Ah, I see how that might've happened, Jon! Next time, try a bit lower temperature and have a touch more flour in the mix to thicken it up. Give it another go!
