Heat the oil in a large ovenproof pan over medium heat. Add the sliced leeks, season with salt and pepper and cook for 5 to 6 mins until softened. Add the garlic and cook for 1 min more.

Notes

Add a handful of spinach at the end for extra greens. | A few prawns mixed in with the fish pie mix make it feel more luxurious. | A squeeze of lemon or some lemon zest stirred into the sauce brightens the whole dish. | Use smoked fish if you want a deeper flavour. | Store in the fridge for up to 2 days. Reheat in the oven at 180C for 15 to 20 mins to keep the filo crisp. Great served on toast or spooned into a warm wrap the next day.
