Make the batter. Whisk eggs, milk, sugar, vanilla and salt. Whisk in flour until smooth, then stir in melted butter. The consistency should look like single cream, thin and pourable. Rest 10 to 20 minutes if you have time.

Ratio to remember: 1:2:2 (egg : flour : milk) | If batter feels too thick, add 1 tbsp milk. | If too thin, add 1 tbsp flour. | For deeper flavour, add a pinch of cinnamon to the peaches. | Crêpes keep 2 days in the fridge. Reheat gently in a pan. | Peaches are brilliant stirred into porridge or yogurt the next morning.
