Another quick easy and very tasty meal. I had franks red hot sauce mayo and siracha as well as some salad with mine. Will defo make again. Probably will do my own flatbreads next time.

I'm going to try making this for the first time tonight but hoping to try subbing in chicken breast for thighs. I don't tend to like dark meat as much, though I know it stays more moist. Any feedback or suggestions for using breasts instead? I'll report back how it goes!

Hi Ashley! Breasts will work great here — just cut them to a similar size as you would the thighs and check them a few minutes early so they don’t overcook. They should still be juicy after the 15-minute roast, especially with all the veg and halloumi in the mix. Excited to hear how it turns out!

I think all in all it worked, but I might have overcooked the chicken breasts a bit - sigh. I'm going to give it another go sometime and tweak it. Still tasty!

Well hello! It had to be homemade flatbreads because in the grocery store there was none! Made it all better though! 😂 But as usual I think I made more. I thought the flatbreads were just smaller but I couldn’t finish it. Great recipe. Easy and with two breakdowns in the motorhome kitchen totally doable. Thanks!
