Salt & pepper your chicken thighs, add to a cold pot along with the oil and get nice and crispy for 5-7 minutes on a high heat (they don’t need to be cooked through completely).
Any green veg!

Delicious 😋 Left the black beans out as I knew kids would not touch it with them in but put extra veg in. Will definitely make again.
