One-pot Nduja Chicken Thigh Pasta

If you’re craving a bold, flavorful dish that’s easy to whip up and full of comfort, this One-Pot Nduja Chicken Thigh Pasta is the answer! Tender chicken thighs are cooked in a savory mix of Nduja paste, smoked paprika, garlic, and a rich stock, infusing every bite with a kick of heat and deep flavor. Broken lasagne sheets (or your favorite pasta) absorb all the delicious goodness, while a medley of vegetables like leek and pepper adds freshness and crunch. Black beans bring a hearty touch, and a dash of red wine vinegar (or lemon juice) balances out the richness. A dollop of yogurt adds a creamy finish, and a sprinkle of Parmesan and fresh coriander elevates the dish. All cooked in one pot for a fuss-free, hearty meal that’s packed with flavour!

Pretty tasty. Found that the sauce separates easily when yoghurt was added. In future I’ll allow to cook a bit before adding. Chicken also took longer to cook than expected. Once crispy, chicken could be finished in oven or air fryer opposed to cooking in pot at end.

Typically forgot to take a picture but it’s Yet another successful dinner. Family loved it as always. Think I’d double the nduja next time though.

Very flavoursome! I didn’t have any lasagne sheets handy so I used the other half of the pack of orzo from the other day. I made it in the pressure cooker and it took half an hour for super tender chicken.

Nice one, Paula! Orzo's a great swap and a pressure cooker guarantees those tender vibes. 😊
