Notes

The dry rub keeps the pork flavourful through long cooking | Reducing the sauce concentrates flavour, do not skip it | Acid at the end keeps everything balanced | Nduja is optional but adds serious depth | Loaded fries: Pork, beans, cheese, herbs | Pasta: Pork and sauce tossed through hot pasta with Parmesan | Sandwiches or burgers: Pork, slaw, mayo | Freeze pork in its sauce for up to 3 months

Great recipe. We served it on buns instead or tortillas. I think the second time around it will feel a lot easier but given the steps and time for each steps it felt pretty involved and that we were cooking all day, which can be fun. The meat took the full time as stated to get tender, allow yourself the full time. Will make again on a lazy day.

Would chuck roast work in this recipe as an alternative to pork?

Sure thing! Chuck roast could work too, just expect a slightly different flavor profile. Go for the same low and slow cooking approach.

Used our slow cooker. Banged it on low for 8 hours and by then the meat took very little effort to pull apart. Really tasty and juicy. CBA making my own slaw as I was busy, so used some 'posh' slaw from Sainsburys instead. 0.5kg of pork gave 2 people 2 decent meals each so pretty easy on the wallet too.

Cheers, Vaughan! Love it when a plan comes together. Respect for the 'posh' slaw swap!

I think the app isn't working correctly. Eg 1.8-2.5kg is the same for 2 people as for 8 but the other ingredients do reduce accordingly.
