I’ve made this a few times in the oven and it’s sooo good! However, I couldn’t replicate the crispiness so tried roasting it in my air fryer and bam!

Any tips for replacing the butter beans? I have replaced with chick peas here as lil ol rural New Zealand makes them difficult to find. Also Kiwi farmer partner is not a fan of the chick peas (too healthy) 🤦‍♀️

SO GOOD. We used chicken thighs to help with cost and used the leftover rice from the Nando’s style chicken legs recipe made earlier in the week instead of a rice bag. Olives in with roasted veg is a game changer! Perfect TV dinner to catch up on MAFS with 🙈

I’d leave the olives out the next time and maybe bake the chicken in foil for most of the time, it felt a bit dry. But these are just minor things, overall really enjoyed this.

I made this with sweet potato to replace the rice, added carrots, and omitted the olives and lemon. Then topped it with some feta for extra protein. Excellent for meal prepping and getting all those yummy nutrients!
