Add grated ginger at the start for a stronger immunity boost. | A teaspoon of miso before blending gives deeper savoury notes. | Add cooked chicken or a soft boiled egg for even more protein. | Spinach can be swapped for kale, but simmer for 3 to 4 minutes first. | Thickens naturally in the fridge. Reheat gently with a splash of water or stock. Works warm or chilled for lunch.

I don’t like peas, or broccoli that much but detox was necessary. Replaced the white onion with shallots and used green lentils (shop didn’t have the beans I needed) and I was astounded! Amazing soup that both me and the kids adored! This will become a heathy staple in our house!!

Nice and easy to make, has that "feels healthy" vibe to it, at least till I added a load of bits and bobs from the cupboard to add texture and heat

Quick and easy. Tastes great as per recipe . So adaptable. Great for batch cooking. Had it as per recipe with cooked prawns and soft boiled eggs added when serving. Plus flatbread for dipping. Family loved it!

Such a light and fresh soup was so welcome as the winter food is ramping up. I used one of the lemons that I bought from a roadside seller on the Amalfi Coast last month, closed my eyes and I was almost back there again. I’m always the one who didn’t have all of the ingredients (I swapped cannellini beans with rinsed green lentils because that’s what I had) but all of the recipes are so relaxed and customisable that I don’t worry too much about making the odd ingredient swap. I think the odd spare bit of courgette would go well in this soup, too. Cosy enough (with the carbs) for a chilly day but it will have you dreaming of Italy.

I'm not a soup person or a fan of super green meals, so I made this for the lady. I was very surprised with how great it was. She loved, it and so did I. Will definitely be a repeat. Excited to try it with some Miso per the notes, and want to try adding a little heat next time too

this is a good soup! i think it could have slightly more flavour - maybe i should've added a bit more salt/pepper or something else (maybe I'll just add more feta! otherwise it's okay!
