Chicken, Mushroom & Tarragon Filo Pot Pie

Comfort food gets a lighter twist with this flaky filo pot pie filled with chicken, mushrooms, and tarragon. Creamy crème fraîche and a hint of mustard bring richness and depth to the filling, while the filo pastry offers a nice crunch without the heaviness of a traditional pie crust. Simple to make and utterly delicious!

Easy peasy recipe. Although added another chicken breast as 1 was never going to cut it for me and the Mrs. Couldn't find any filo in the local supermarket so bought some puff instead. Oof pie-tastic!

Puff pastry is a tasty swap for the filo - that flaky texture sounds fab! Adding extra chicken was a smart move for heartier portions.

Comforting enough for a cold day but still fresh and light. I’ve made it a couple of times - the first time I’d run out of chicken and substituted a bag of cashews I had in the cupboard. It still worked really well.

Now this hit the spot on a cold night. Used the AI feature, swapped out the Tarragon for mixed herbs and added a sprinkle of chilli flakes into the mix. Mountain of green veg, absolute winner.

Genuinely this app is becoming my go to for autumn/winter. This pie was next level! So so simple but delicious, the filo pastry made a lovely change from shortcrust or puff. This will be made on repeat

A couple of tweaks because I don’t like tarragon and I couldn’t get any filo. I cut small squares of puff pastry so it was like a patchwork effect and it looked great - photo after we’d ate most of it. Absolutely gorgeous!
