Notes

Ratio to remember: 1 banana : 1 egg, then add oats until thick. Letting the batter sit is important when using whole oats. Keep heat moderate, banana batters brown quickly. Smaller pancakes flip more easily without baking powder. These reheat beautifully in a dry pan or toaster. They’re also great cold as a toddler snack, almost like a soft flapjack.
