Pie-in-a-pan: Chicken Filo & Veggies

Autumn and winter comfort food but made easy! In one pan, this recipe brings together chicken thighs and a medley of colourful vegetables in a rich and creamy thyme chicken sauce. Finished with a flaky filo topping and served with lashings of rich gravy, this is a lighter twist on a classic pie — no rolling, no fuss, just layers of flavour in every bite.

Loved the pie, did have to switch up a little as we were missing a few bits but still all good, froze the mix for a super quick dinner just needing the filo another day! 🙌🏻 Think the timings are a bit understated though as the prep takes much longer before the oven? 🤔

This is like autumn in a pan. I substituted nonfat Greek yogurt for the crème fraise due to dietary requirements but it is so good. Paired it with spaghetti squash, and it was truly so amazingly delicious. This is a repeat for sure!

Could you use Philadelphia over creme fraiche? Too lazy to go to shops 😂

Sure can! Philadelphia would be a good swap - just need about the same amount as the crème fraîche. It'll add a slightly different tang but equally tasty.
