Pressing the mince thin is what gives you that doner texture, thick mince just turns into meatloaf. | Lamb mince works brilliantly here too, just expect slightly higher calories and richer flavour. | For extra doner vibes, add ½ tsp ground coriander and a pinch of cinnamon to the spice mix. | If your yogurt is thick, loosen it with lemon juice and a pinch of salt for a quick sauce. | Leftover mince is unreal cold or reheated. Chuck it into wraps, grain bowls, or fry it crisp and top a salad. It also freezes well once cooked, just reheat in a hot pan.

Very nice and easy! I did beef mince but used 5% so next time will definitely try lamb mince as it dried out a little at the end. I did see afterwards I was supposed to use 10% beef but hadn’t got that one lol
