Oven-Baked Doner-Style Mince Pittas

This is a proper fakeaway win, spiced mince baked flat then rolled and shredded so you get that doner-style texture without a rotisserie. Fast, high-protein, big flavour, very doable on a weeknight.

Step 1

Heat the oven to 200°C fan. Lay a large sheet of baking paper on a tray and add the mince. Press it out very thin into a large rectangle, about 5 mm thick; this is key for texture.

Notes

Pressing the mince thin is what gives you that doner texture, thick mince just turns into meatloaf. | Lamb mince works brilliantly here too, just expect slightly higher calories and richer flavour. | For extra doner vibes, add ½ tsp ground coriander and a pinch of cinnamon to the spice mix. | If your yogurt is thick, loosen it with lemon juice and a pinch of salt for a quick sauce. | Leftover mince is unreal cold or reheated. Chuck it into wraps, grain bowls, or fry it crisp and top a salad. It also freezes well once cooked, just reheat in a hot pan.

Struggled to get the meat really thin, but otherwise tasted fantastic!

Very nice and easy! I did beef mince but used 5% so next time will definitely try lamb mince as it dried out a little at the end. I did see afterwards I was supposed to use 10% beef but hadn’t got that one lol

Laura, lamb mince is a delicious twist! You're spot-on about the fat percentage; a bit more fat gives that tender juicyness🤤 Give it a go with the 10% beef or lamb, and you'll love the difference. Happy cooking!

As my son said ‘Banging!’. Added sumac for the lemony zing.

Forgot to take a photo until I had nearly finished. Family really enjoyed it but I will do it thinner next time!

Thinner is key for that best-ever texture! So glad your family enjoyed it. Definitely try another round soon!

My wife loves a kebab and she gave this top marks. Could have done with making it a bit thinner but will definitely try again!

Nice one, David! Next time, try patting it out to 5 mm for a truly authentic doner texture. Enjoy your next round!

Beef works great, but lamb's cool if you like! Go with what you enjoy more.

Should have made the meat thinner but was a really good alternative (and a lot less calorific) to a takeaway

Thanks, Chris! The texture gets extra special when it's pressed super thin. Give it another shot, I'm sure you'll nail it! 😄
