Use kitchen scissors for the chicken, it is quicker and cleaner than a knife. Add a squeeze of lime at the end for brightness. Swap halloumi for paneer or feta if needed. Add a can of beans to bulk it out and boost the protein and fibre. The roasted mix works cold in salads or reheated and stuffed into pittas. You can also turn leftovers into a quick rice bowl by stirring through cooked rice and a spoon of yogurt.

First meal as part of the Salty Flavours club. I’m not a confident cook at all, so this was a perfect meal for me to grow my confidence, whilst also not being over complicated. Fiancée has coeliac disease and this was great for her too by swapping out to GF wraps. 7 year old step daughter is a very fussy eater but rated it “1 million out of 10”. Thank you for helping me build my confidence whilst pleasing a family of four!

Mix of veggie and non veggie in my house, so did the veg in the oven as per recipe, but marinated chicken in spice mix and oil and made an omlette tp slice up for the veggie option. By not mixing it up, everyone gets a fair share as well. Bit of soured cream an guac to the wrap is lovely!
