I like to freeze ftesh oregano and basil, but instead of water, I use tomato passata. Instant herb bomb without being watered down. Also freeze fresh chopped ted and green chillies in black coffee. 2 or 3 slung into a beef brisket chilli con carne. Sublime.

Has anyone tried the freeze dried herbs/veges from Jux? I've just received my second order but this is the first time getting the freeze dried vege powders (got tomato and spinach to try).

Here in Chile we use Merkén, it's warm, smoky and spicy. A great adittion to legumes or beef. Also I tend to use some nutmeg in a variety of dishes.

As someone with a fish allergy a fantastic alternative to Worchester sauce (which usually contains anchovies) can be found in Hendersons Relish. Slightly more tangy but adds the extra flavour depth to bolognases, stews etc that Worchester sauce would otherwise provide.

Such a useful summary, thanks for sharing. Just a caution, Worcestershire Sauce is made from anchovies (!) so not veggie/vegan. Henderson's Relish has very similar flavour profile though, and ticks the veggie box!
